Start Your Day Off Fresh and New

For everyone, not just athletes, breakfast is crucial to starting the day off on the right track but it truly has to be one of the most neglected meals of the day. From the “I’ll just have coffee and a muffin” crew to the “I’ll have just coffee and then have a packet of oatmeal at my desk” folks, bad habits rule the morning. Having broken meals, those that lack protein and those that lack variety can still sabotage your good eating efforts even though you believe you are having a “good” breakfast. The most common excuse given for poor breakfast choices: not enough time. Here are three ways to start your day off fast and different so as to add some fun to your morning and to allow enough time to get ready for work.
1) Loaded Muffin
1 100% WW English muffin
½ c cottage cheese
¼ cup chopped dried fruit
Toast muffin, spread CC and sprinkle with fruit.
2) Eggs In a Bucket
1 whole egg
3 egg whites
Finely diced cooked veggies
Salt/pepper/spices to taste
1 Slice thick cut 100% SG Multi Grain Bread
1 ramekin
Slightly mix eggs and veggies. Pour into a greased ramekin.
Bake in oven on 350 to desired wellness (7 min. or less). Use
This time to get ready for work. Flip onto toast when done. Enjoy.
3) Breakfast Pizza
1 whole wheat pita
¼ cup marinara sauce
2 ew’s scrambled and crumbled
½ c diced cooked veggies
2 to 3 T shredded cheese
Spread sauce on pizza. Spread crumbles and veggies on pita.
Lightly sprinkle with cheese to hold it together. Bake in toaster
Oven until bubbly.

Can I get an “AMEN”!?
Breakfast is one of my favorite meals. If I workout in the morning I’ll eat slow cooked oats w/a scoop of protein powder. I usually make crock pot steel cut oats or a big ole batch of slow cooked oats on Sunday to eat all week long.
Homemade protein bars work well, too, for breakfast on the go.
I often make crustless veggie quiches, too, to eat throughout the week.
I’m also a fan of protein shakes on the go…I sneak in spinach to make sure I’m getting my vegetables along with my protein.
Oh, last one and then I’ll shut up…plain greek yogurt w/cinnamon. Love it!

Im really morning boring and often end up with eggs scrambled and oatmeal BUT you have me remembering my once beloved MUFFIN IN A MINUTE!!

it can be a messy clean up if you dont immediately soak yer muffinmug

Flax meal pancake:
6 TB flax meal
2 eggs
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
optional add berries, apple chunks, etc
Mix, then cook in pancake like you would any other pancakes. Will fluff up nicely, very filling.
Ooo. Breakfast pizza. This will break up the weekend breakfast bore. During the week, I grab Greek yogurt and piece of fruit while my legs are still moving….and I’m off!
Never thought to put cottage cheese on an English Muffin … Gotta try that one!
